Its that time again....

Tomato time! If your like me, your tomato plants are working over time! You have so many tomatoes and no idea what to do with all of them! Well we are here to help. Keep checking back all this weekend for awesome recipes, tips, and ideas all about our favorite summer food tomatoes! Our first recipe is a DELICIOUS and super easy pasta dish.

Ingredients:

1 box penne pasta
1 pint of grape/cherry tomatoes (any color will do)
2 cloves of garlic, minced
1 ball of fresh mozzarella cheese cut into cubes
1 big bunch of basil all torn up
1 1/2 tablespoons olive oil
Splash of balsamic vinegar
Salt and Pepper

First bring your water to a boil, season with salt, and add your pasta and cook until al dente (follow package directions)

Meanwhile, cut your tomatoes in half and throw in a large bowl along with garlic, mozzarella, basil, olive oil, and balsamic. Season with salt and pepper and let sit until pasta is done.

When pasta is cooked, drain, and add to tomato mixture and toss to combine. Eat and enjoy!

*Variation: Cold pasta salad, when pasta is done cooking simply run under cold water, toss with tomato mixture, then chill!
